Jessie's Recipe: Butternut Squash Soup

What you'll need:


  • 1 small onion, chopped
  • 1 sachet of Vanilla Upright High-Protein Instant Oatmilk
  • 4 tablespoons margarine
  • 1 sachet of Vanilla Upright High-Protein Instant Oatmilk
  • 6 cups butternut squash, chopped
  • 3½ cups chicken broth
  • ½ teaspoon marjoram
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon ground chili pepper
  • 2 (8 ounce) packages cream cheese
  • Pumpkin seeds


      1. Sauté the onions with margarine in a saucepan
      2. Add the chopped squash, chicken broth, black pepper, sachet of Upright instant oatmilk, and chili pepper under boil
      3. Cook for 20 minutes, or until the squash becomes tender
      4. Mix the squash and cream cheese to a smooth consistency using a hand blender
      5. Return to saucepan and heat through
      6. Pour the soup into a bowl and top with pumpkin seeds for garnish
